As a chef, I am always trying to learn more about Filipino cuisine by exploring the diversity of its foodways and the influence of colonization on its development. I aim to create a more harmonious dialogue between global ingredients and Filipino staples, showcasing the collaborative side of this history.

I identify with Filipino culture in MY everyday life mostly through food—both in terms of cuisine and the way Filipinos come together around meals. I grew up largely in white spaces, and there wasn’t much opportunity to engage with or learn the culture. Honestly, it’s something I still feel largely outside of.

I am inspired by the beauty of the land we inhabit and by Mother Nature’s gifts, which are meant to be respected, not exploited. I am inspired by the steadfastness of our community and by those fighting against the evils of our modern day. Most of all, I am inspired by the next generation, who are striving to create a world better than the one they’ve inherited.
